Mock Macaroni and Cheese Recipe

My husband read that you could substitute barley for pasta in recipes. Today, we decided to try it. We made Mock Macaroni and Cheese. It turned out really well. You could not even tell the difference. Barley is lower on the Glycemic index than pasta, it is a whole grain, and it is gluten-free. This recipe could be used as a side dish or a main dish since it has so much cheese in it there is a good bit of protein.

Mock Macaroni and Cheese Recipe


1 box Barley
1 lb. sharp chedder cheese, grated or more
2 eggs
1/2 stick butter
1 tsp. mustard
2 squirts hot sauce
1 can evaporated milk


Cook barley according to directions on the package. Drain. Add butter and most of the cheese, save a little to go on top. Stir until they are melted. Add eggs,  mustard, hot sauce, evaporated milk, and pepper. Pour into casserole dish sprayed with cooking spray. Bake at 350 degrees for 45 minutes to 1 hour.
