Chicken Pot Pie Soup

We have been trying to cut down on eating too many bread products so I created this Chicken Pot Pie Soup Recipe to have in place of Chicken Pot Pie. I really liked it, of course I love soup on cold winter days. I was kind of surprised when my husband said he liked it and thought it was very satisfying, so I'm making it again tonight for supper. Another thing I like about this recipe is that it is what a call a pantry meal. You can have everything in the pantry and stir up a quick meal in a hurry.


1 onion, chopped
1 13 oz. can chicken breast
1 can cream of chicken soup
1 can chicken broth
1 can sweet peas
1 can sliced carrots
1 4 oz. can sliced mushrooms


Saute onion in 1 tbsp. of olive oil until clear. Add chicken and shred it. Add cream of chicken soup and chicken broth, stir to combine. Add remaining vegetables and liquid. Simmer on medium low to low heat until heated thoroughly.

**If you didn't want to use canned meat and vegetables you can always substitute fresh or frozen chicken and vegetables. It will just take a lot longer to cook it.
