Stuffed French Toast with Strawberry Syrup Recipe

I made this recipe for my granddaughter's 13th birthday. It is delicious and we both enjoyed it very much. I like making up a big batch of this recipe. It heats up well if you have leftovers. You can also wrap the french toast individually and freeze it until you're ready to eat it.




Ingredients:

12 slices of bread 
**I prefer wheat bread**
8 oz. cream cheese

2 eggs
1 cup milk
1 tsp. vanilla flavoring

1 cup strawberry jam or preserves
1-2 cups fresh or frozen strawberries, sliced

Directions:

Put strawberry jam in small saucepan on low heat. Heat until it starts to boil. Add strawberries. Only cook strawberries long enough to heat through. Spread the cream cheese on half of the bread slices and cover with other half of bread slices. Mix together eggs, milk, and vanilla. Dip bread in the egg mixture and grill on griddle sprayed with cooking spray, if you have one, if not, use a frying pan to cook the french toast. Cover with strawberry syrup. Enjoy.

Vegetable Oven Omelet Recipe

This is a great omelet that can be used for breakfast, lunch, or dinner. It is loaded with plenty of vegetables. This omelet warms up well in the microwave so don't worry if you have leftovers.




Ingredients:

 1 tbsp. olive oil
3-4 large handfuls of spinach or kale
1 onion, diced
1 can diced tomatoes
1 4 oz. can sliced mushrooms
8 eggs
1 cup milk
8 oz. sharp cheddar cheese, grated






Directions:

Saute vegetables in olive oil until onions are clear and greens are wilted well. Mix eggs, milk, and cheese together. Spray a 8 or 9 inch square pan with cooking spray. Put veggies in pan first, then pour egg mixture over veggies. Mix all together. Bake in preheated 350 degree oven for 45 minutes. Cut omelet into individual servings. Enjoy.

Red, White, and Blue Fruit Salad Recipe

This is a nice cool, refreshing fruit salad. It is great for hot summer days.


Ingredients:

1 banana, sliced
1 apple, diced
1 pear, diced
1 cup strawberries, sliced
1 cup blueberries
1 cup plain Greek yogurt
1/2 cup chopped walnuts
1 tbsp. honey
Red, White, and Blue Fruit Salad

Directions:

Peel and chop fruit. Mix all ingredients together. Divide into serving dishes. Enjoy
