Carrot Cake

1-1/2 cups oil
3 cups self-rising flour
1/8 tsp. salt
2 cups sugar
1 tsp cinnamon
4 eggs
1 cup chopped nuts
2 cups grated carrots
Mix altogether, pour into greased and floured tube pan.  Bake at 325 degrees for
1-1/2 hours.

Cream Cheese Frosting
1 8-oz. pkg cream cheese
1/2 stick butter
1 box confectioners' sugar
1 tsp vanilla
1 cup chopped nuts
Cream together cream cheese and butter.  Add confectioners sugar & vanilla, beat until fluffy.  Stir in nuts.  Spread on completely cooled cake.  Enjoy!     
*I prefer walnuts, but you can use pecans if you want.

Macaroni and Cheese

8 oz. elbow macaroni
8 oz. sharp cheddar cheese, shredded
2 eggs, beaten
1 can evaporated milk
pepper to taste
Cook macaroni according to package directions.  Don't overcook.  Drain.  Stir in cheese until melted, add eggs, milk, pepper.  Put in casserole dish sprayed with cooking spray.  Sprinkle top with more grated cheese if you desire.  Bake at 350 for 45-60 minutes until light golden brown.
**Bake at 325 degrees if using a glass casserole dish.
