Lori’s Strawberry Oat Bars
This is a recipe my friend Lori who is in the Palmetto Christian Writer's Network with me shared. I baked them last night and they were delicious. They remind me of a granola bar. They call for strawberry jam and that is what I used, but I guess you could use any kind of jam you like. My husband thought they would be good with dates.
¾ c. margarine, softened
1 c. brown sugar
1-1/2 c. plain flour
½ tsp. baking soda
¼ tsp. salt
1-1/2 c. oatmeal
1 c. chopped walnuts
Cream brown sugar & marg. together. Add other ingredients. Mixture will be crumbly. Reserve ½ c. for topping. Spray 9x13 inch pan w/Pam and press mixture into the bottom. Top w/ ½ c. strawberry jam.Sprinkle reserved crumbs on top.
Bake at 400 for 20-25 min, being careful not to over bake. (Watch the edges for browning.)
**I used a glass pan to bake mine so I decreased the temperature to 375 and didn't have any trouble with over browning. They were golden brown.
Can drizzle top w/ ½ c. chocolate pieces mixed w/ 4 tsp. margarine for an extra oomph.
