Pineapple-Orange Fruit Salad

This is a fruit salad that I like doing at the holidays, but since it is cold it would also be good for a light dessert in the summer. 

1 lg. can crused pineapple
1 lg can mandarin oranges, drained and chopped
1 lg. sour cream
1 cup chopped walnuts
1 bag miniature marshmallows

Mix together, chill and Enjoy!

Chocolate Town Pie Recipe

I made this pie today for my husband's birthday dinner.
It is like a big chocolate chip cookie in a crust!

9 inch unbaked pie shell
1/2 cup butter or margarine, softened
2 eggs, beaten
2 tsp vanilla
1 cup sugar
1/2 cup all-purpose flour
1 cup semi-sweet chocolate chips
1 cup coursely chopped nuts
 **I use walnuts

In mixer bowl cream butter; add sugar, add eggs one at a time, add flour and vanilla.  Stir chocolate chips and nuts into creamed mixture.  Pour into unbaked pie shell.  Preheat oven to 350 degrees.  Bake 45-50 mins. until golden brown.  Cool atleast one hour before serving.  May serve warm or cold.

Makes 6-8 servings

**I usually double this recipe it is just as easy to make two at one time.  Plus I need two when I have the whole crew at home.

Hash Brown Breakfast Casserole

I made this Hash Brown Breakfast Casserole for my family this morning.
They enjoyed it and I hope you will too!

12 eggs
1 cup milk
1/2 cup Half n Half
10-12 ozs. sharp cheddar cheese, shredded
12 slices bacon, cooked crispy & crumbled
2 bags 20 oz. ea. Simply Potatoes Shredded Hash Browns
**found in the refrigerator section**
Salt and pepper

In a bowl, stir together the eggs and milk salt & pepper.  Then, add cheese and bacon crumbles.  Spray a 13x9 casserole dish with cooking spray.  Put potatoes in casserole dish and sprinkle with salt and pepper.  Pour egg mixture over the potatoes and stir gently with a fork to combine.  Bake in 325 degree for 45-60 mins. until set and lightly golden.

** This makes about 12 servings.  If you don't need that much you can cut the recipe in half and bake it in a 2 quart or 9 inch baking dish.

Cheese Ravioli Casserole Recipe

This is one of my quick and easy recipes that I made for the grand kids.
They loved it and it was as easy as it gets.


2 bags Frozen Rosetta Small Round Cheese Ravioli
2 jars spaghetti sauce
**I mixed one jar of sweet basil & 1 jar of spicy basil
4 heaping tablespoons Parmesan Cheese
1/2 cup water
---
mozzarella cheese grated, if desired

Spray 13x9 casserole dish with cooking spray.  Put 1 bag of Ravioli in bottom of dish, top with 1 jar spaghetti sauce, rinse out jar w/ 1/4 cup water, sprinkle with 2 tbsp. Parmesan cheese. Sprinkle with mozzarella cheese, if desired.  Repeat layers.  Spray foil with cooking spray to keep it from sticking to the cheese and place on top of casserole dish.  Bake in 400 degree oven 30-45 mins. or until heated through.

Makes about 12 servings.

**If you don't need this much you can half the recipe
