Squash Casserole Recipe

2 lbs. tender yellow squash
1/2 cup chopped onion
3/4 cup saltine cracker crumbs
1 1/2 cups grated sharp cheddar cheese
3 eggs
1/2 cup evaporated milk
Salt and pepper to taste

Slice squash and cook with onion in a little bit of water until soft, then drain.  Chop squash with spatula.  Add cracker crumbs, butter and most of the cheese.  Season with salt and pepper.  Beat eggs slightly, add cream and mix into squash.  Pour into buttered casserole dish.  Sprinkle remaining cheese on top.  Bake at 350 degrees until done. Makes 8 servings.
