Chicken Penne Pasta Recipe

Basic Recipe
1 tbsp. olive oil
1 lg. onion diced
1 (13.25 oz) box Healthy Harvest Whole Grain Penne Pasta
1 (15 oz) jar Classico Roasted Red Pepper Alfredo Sauce
1 bag Tyson Grilled Chicken Strips Fajita Style or grilled chicken breasts
1/4-1/2 cup evaporated skim milk
Add More Veggies and Nutrients
1 bag fresh spinach or 1 box frozen chopped spinich, thawed and drained
1 cup cherry or grape tomatoes cut in half, or 1 can diced tomatoes
1 cup sliced fresh mushrooms, or 1 can sliced mushrooms, drained

Heat oil in pan for a minute or so, then add diced onion saute until clear.  While onion is cooking heat water to boil for pasta and cook pasta according to package directions.  If you want to increase the veggie and nutrient content you can add the spinach to the onion mixture, then add the chicken and cook until the chicken is thawed out.  I usually use the side of the spoon and cut the chicken strips into bite size pieces. If you use the whole chicken breast you can cook them in the oven while making the sauce and then add to the sauce at the end. Then add the Alfredo sauce and milk and simmer until heated through.  If you want to add the tomatoes add them last. Drain Pasta and mix it all together or serve Chicken Alfredo over pasta.  Sprinkle with Parmesan cheese, if desired.

**If you want you could use boneless skinless chicken breasts and slice them and season them, but I use the Tyson ones for convenience and I like the Fajita flavored, because it makes it more flavorful or I use the Tyson whole grilled chicken breast.
