Mock Macaroni and Cheese Recipe

My husband read that you could substitute barley for pasta in recipes. Today, we decided to try it. We made Mock Macaroni and Cheese. It turned out really well. You could not even tell the difference. Barley is lower on the Glycemic index than pasta, it is a whole grain, and it is gluten-free. This recipe could be used as a side dish or a main dish since it has so much cheese in it there is a good bit of protein.

Mock Macaroni and Cheese Recipe


Ingredients:

1 box Barley
1 lb. sharp chedder cheese, grated or more
2 eggs
1/2 stick butter
1 tsp. mustard
2 squirts hot sauce
1 can evaporated milk
pepper

Directions:

Cook barley according to directions on the package. Drain. Add butter and most of the cheese, save a little to go on top. Stir until they are melted. Add eggs,  mustard, hot sauce, evaporated milk, and pepper. Pour into casserole dish sprayed with cooking spray. Bake at 350 degrees for 45 minutes to 1 hour.

Easy Strawberry Shortcake Recipe

I made this recipe today for the first time. It really turned out good and everybody enjoyed it. Even my husband who is not a big strawberry fan came back for seconds.

Easy Strawberry Shortcake Recipe

 Ingredients:

1 box yellow cake mix
*I used the one that calls for butter
Strawberries, sliced
1/2 cup sugar
1 8oz. block cream cheese, softened
1 8oz. cool whip
1/2 cup confectioners sugar

Directions:


Slice strawberries add 1/2 cup sugar, let sit for several hours or overnight. Meanwhile, bake cake according to the directions on the back of the box. I baked mine in a 13x9 pan. The cake mix I used called for eggs, water, and butter. Let cake cool completely. While cake is cooling, make topping: beat cream cheese with the mixer, add confectioners sugar and cool whip. Poke holes in cake with a skewer. Spoon strawberries and juice over the cake. Top with cream cheese mixture.

Montreal Pork Chops with Mushroom Gravy

I created a recipe by accident today that everybody loved. I was cooking for the whole family today so I made a lot, but you can do it according to how many people you're feeding. I had input from my grandson and husband that helped me in the process and it was a hit.



Montreal Pork Chops with Mushroom Gravy

Ingredients:

Boneless pork chops
Montreal Steak Seasoning
2 large onions, sliced in slivers
1 8oz. pkg. sliced mushrooms
1 tbsp. Worcestershire sauce
1 can cream of mushroom soup
1 soup can of water

Directions:

Wash pork chops and season them on both sides with the Montreal Steak Seasoning. I used a big nonstick frying pan spayed with cooking spray. Put the chops in the pan on medium heat. Brown chops on each side. Add onions and mushrooms. Sprinkle with Worcestershire sauce. Saute for a few minutes or if you prefer until they are caramelized. Mix cream of mushroom soup and water together pour over pork chops. Once gravy is heated well turn down to simmer and cook until tender.

Apple Fritter Bread Pudding Recipe

My hubby found some Apple Fritter Bread at the deli in Wal-Mart. He thought it would make a good bread pudding or breakfast casserole. He found a recipe at AllRecipes.com and adapted it to create this recipe. We served it for brunch with Chicken Apple Sausage on the side. It could also be served as a dessert. It was delicious.



Ingredients:

6 eggs
1 cup half n half
1/2 cup evaporated milk
1 tbsp. vanilla
1 tsp. nutmeg
1/8 tsp. cinnamon
1 loaf Apple Fritter Bread, cubed
2 Granny Smith apples, peeled, cored, and sliced
1 cup brown sugar
1 tsp. cinnamon
1/4 cup melted butter
1/4 cup raisins (optional)
1/2 cup chopped walnuts (optional)
1 Granny Smith apple, peeled, cored, and diced

Directions:

Mix together eggs, milk, nutmeg and 1/8 tsp. cinnamon. Fold in bread cubes and soak 5-10 minutes add raisins and nuts, if desired. Mix together brown sugar, 1 tsp. cinnamon, and melted butter. Toss sliced apples into sugar mixture. Grease 9x13 pan with butter or cooking spray. Put apple slices in the bottom of the pan. Spoon bread mixture on top of apples.  Cover with foil and refrigerate overnight, if you want to make ahead of time. If not, soak bread mixture for at least 10 minutes before finishing recipe. Preheat oven to 375 degrees. Sprinkle diced apples on top. Cover with foil and bake for 40 minutes. Remove foil and broil until golden brown about 5 minutes, watch closely. Let stand 5-10 minutes before serving. Cut into squares and serve. If serving for breakfast you can serve with a side of bacon or sausage.

Black Bean Corn Salad

Black Bean Corn Salad


Ingredients:

1 can black beans, drained
1 can whole kernel corn, drained
2 tomatoes, diced
1 onion, diced
2 avocados, diced
2 tbsps. olive oil
2 tbsps. malt vinegar
1/4 tsp. minced garlic
juice of 1 lime
salt and pepper to taste

Directions:

Mix all ingredients together. Serve as a side dish. I served mine over lettuce with a grilled chicken breast for a complete meal, but I like it so much I could eat it by itself. Refrigerate leftovers.

Chicken Spinach Pasta Recipe


Sometimes I make up recipes based on what I have in the house. This is one of those kind of recipes. I buy a lot of my canned goods at Sam's by the case so I usually have a good stock in the pantry. I also like to buy meats and meat products when they are on sale and store them in the freezer.

Ingredients:

1 tbsp. olive oil
1 onion, diced
1 pkg. Tyson grilled chicken strips
2-4oz. or 1 8oz. can sliced mushrooms
   (you could also use fresh mushrooms if you prefer)
2 cans diced tomatoes
2 cans tomato sauce
2 tsp. oregano
2 tsp. basil
Parmesan cheese

-----
1-16 oz. box rotini noodles
1 tbsp. salt

Directions:
 
In a large saucepan put olive oil, onion, and chicken strips. Cover with lid and let cook until onion is clear and chicken strips are thawed. Add the remaining ingredients for the sauce and let it simmer. Boil water for pasta and add 1 tbsp. of salt to the water. Cook pasta according to directions on box. I like to cook the pasta until it is barely cooked, then drain it and add it to the pasta sauce. Sprinkle generously with Parmesan cheese and serve.

Raw Granola Recipe

 I love granola. I usually buy it at the store already made, but I've been trying to eat healthier and include more raw food in my diet, so I decided to try making my own granola. It is delicious. It basically has the taste of oatmeal cookies without all the sugar and flour.




Ingredients:

3 cups Old-Fashioned Oatmeal
1 cup golden raisins
1 cup unsweetened coconut
1 cup slivered fresh almonds
1/4 cup coconut oil melted
1/4 cup agave
1 tsp. ground cinnamon

Directions:

Mix first four ingredients together in a large bowl. Melt coconut oil in a microwave safe dish for 30 seconds. Mix melted coconut oil,  agave, and cinnamon together. Pour over dry ingredients and mix well. You can eat raw if you like, or bake it in a 150-170 degree oven for 10 minutes, then take out and stir and bake 10 more minutes. This is still considered raw since it is on such a low temperature. It is basically the same as putting it in a dehydrator, which you can do, if you have one. Most recipes I saw online said to leave in the dehydrator for 10 hours, if you choose that method. I did mine in the oven, but it was also good unbaked. I ate mine with coconut almond milk, but you can use whatever kind of milk you choose. It would also be good with fruit and yogurt.
