Raw Granola Recipe

 I love granola. I usually buy it at the store already made, but I've been trying to eat healthier and include more raw food in my diet, so I decided to try making my own granola. It is delicious. It basically has the taste of oatmeal cookies without all the sugar and flour.




Ingredients:

3 cups Old-Fashioned Oatmeal
1 cup golden raisins
1 cup unsweetened coconut
1 cup slivered fresh almonds
1/4 cup coconut oil melted
1/4 cup agave
1 tsp. ground cinnamon

Directions:

Mix first four ingredients together in a large bowl. Melt coconut oil in a microwave safe dish for 30 seconds. Mix melted coconut oil,  agave, and cinnamon together. Pour over dry ingredients and mix well. You can eat raw if you like, or bake it in a 150-170 degree oven for 10 minutes, then take out and stir and bake 10 more minutes. This is still considered raw since it is on such a low temperature. It is basically the same as putting it in a dehydrator, which you can do, if you have one. Most recipes I saw online said to leave in the dehydrator for 10 hours, if you choose that method. I did mine in the oven, but it was also good unbaked. I ate mine with coconut almond milk, but you can use whatever kind of milk you choose. It would also be good with fruit and yogurt.

Strawberry Cream Cheese Pie Recipe

I love strawberries. Strawberries are my favorite fruit. We have a strawberry patch close to our house. You can go to the field and pick strawberries if you like. They also have a fruit stand where they sell the strawberries already picked. We used to go pick them in the field when my children and I were younger, but now I go to the stand and buy the ones that have already been picked.

The strawberries are much fresher and better than the ones you get at the grocery store. Yesterday I started to make a dip for the strawberries I had bought over the weekend and ended up making a pie. I hope you enjoy it. I made mine in a large store-bought graham cracker crust, but all of the jello wouldn't fit in the pie shell. You may want to make your own crust and layer it in a 9 x 13 pan.



Ingredients:

Pie Crust: Either use a large pre-made pie crust or
 2 cups of Graham Cracker Crumbs
1/4 cup sugar
1/2 stick butter, melted
Bake at 350 degrees for 5-10 minutes.

Cream Cheese Layer:
2 8oz. Cream Cheese
1 cup powdered sugar
1 8oz. Cool Whip

Jello Layer:
Fresh Strawberries, sliced
1 pkg. strawberry Jello
 (made according to package directions)

Use as Top Layer or Garnish with:
1 8oz. cool whip
Fresh Strawberries (cut in half)

Directions:

Either use a pre-made crust or make your own crust in a 9x13 pan. Let cool if you make your own. Cream cheese in a medium mixing bowl. Add powdered sugar. Then, add cool whip. Layer on top of pie crust. Mix up jello and let cool in fridge for about 1 hour. Meanwhile slice strawberries and arrange on top of cream cheese layer. Pour Jello over strawberries and let cool for several hours or overnight, until jello is set. Garnish with cool whip and more strawberries when ready to serve. Keep refrigerated.

Like I said earlier I love strawberries so as far as I am concerned you can't have too many strawberries. The more the merrier.

Chicken Pot Pie Soup


We have been trying to cut down on eating too many bread products so I created this Chicken Pot Pie Soup Recipe to have in place of Chicken Pot Pie. I really liked it, of course I love soup on cold winter days. I was kind of surprised when my husband said he liked it and thought it was very satisfying, so I'm making it again tonight for supper. Another thing I like about this recipe is that it is what a call a pantry meal. You can have everything in the pantry and stir up a quick meal in a hurry.

Ingredients:

1 onion, chopped
1 13 oz. can chicken breast
1 can cream of chicken soup
1 can chicken broth
1 can sweet peas
1 can sliced carrots
1 4 oz. can sliced mushrooms

Directions:

Saute onion in 1 tbsp. of olive oil until clear. Add chicken and shred it. Add cream of chicken soup and chicken broth, stir to combine. Add remaining vegetables and liquid. Simmer on medium low to low heat until heated thoroughly.

**If you didn't want to use canned meat and vegetables you can always substitute fresh or frozen chicken and vegetables. It will just take a lot longer to cook it.

Ingredients:

1 lb. Hamburger
1 onion, diced
1 cup catsup
1-2 cans green beans, drained
Instant Mashed Potatoes or real mashed potatoes
Grated cheese, if desired
salt and pepper, to taste

Directions:

Brown hamburger. Add onion and saute until the onion is clear. Add catsup and green beans. Make mashed potatoes according to package directions. (To make the potatoes richer and more like real mashed potatoes, I use canned cream (evaporated milk) instead of milk) Layer in a casserole dish sprayed with cooking spray. Add grated cheese on top, if desired. Bake at 350 degrees for 30 mins. or until hot through.

Chocolate Covered Strawberries Recipe

Chocolate Covered Strawberries Recipe


This is one of the easiest and best recipes I have.

Ingredients:

Semi-Sweet Chocolate Chips 
Fresh Strawberries

Directions:

Melt chocolate chips in double boiler over simmering hot water. If you don't have a double boiler you can use a metal bowl inside of a pot of hot water. While chocolate is melting wash and dry strawberries. Dip strawberries in chocolate and lay out on a cookie sheed covered with waxed paper. Let sit until chocolate hardens. Refrigerate.

*You can use chocolate Hershey bars in place of the chocolate chips if you prefer.

**You could also use white almond bark if you prefer white chocolate.
 
***A cute idea I saw the other day on the Dr. Oz show was to put the chocolate in an ice cube tray then put the strawberries in each section of the tray. This way if you want to serve them on a tray they will stand up instead of laying down like they are when you lay them out on waxed paper.

Stuffed Baked Spaghetti Squash Recipe

Ingredients:

1 lb lean ground beef
1 onion, diced
1 bell pepper, diced
1/2 tsp. chopped garlic
1 4 oz. can sliced mushrooms
1 can diced tomotoes
1 can spaghetti sauce
1 spaghetti squash
2 tsp. olive oil
salt, pepper, basil, oregano
Grated cheese
 
Directions:
Place spaghetti squash on a cookie sheet sprayed with cooking spray. I have trouble cutting them in half so I cook it for a while and then cut it once it starts to soften. Bake at 350 degrees for about 15-20 minutes, then cut in half and scoop out seeds. Drizzle 1 tsp. olive oil on each half and salt. Bake another 15-20 minutes. When the squash is done, use a fork to scrape the inside of squash. It will look like strings of spaghetti. Put sauce inside the squash and top with grated cheese. I used cheddar, but would also be good with Parmesan and mozzarella.

Make meat sauce while spaghetti squash is cooking. Brown beef and drain. Add onion and bell pepper and cook them for a few minutes until they are softened. Add remaining ingredients. Simmer until ready to fill spaghetti squash.

Cinnamon Popcorn Recipe

 
 
Cinnamon Popcorn Recipe
Preheat: 250
Time: 30-40 minutes, plus cooling time

Ingredients:
1 bag butter flavored microwave popcorn
1 cup dry roasted peanuts--optional, but highly recommended!
1 cup brown sugar
1 teaspoon cinnamon
1 stick butter
1/4 cup syrup (original recipe called for light corn syrup I used regular syrup)
1 teaspoon vanilla extract
1/2 teaspoon baking soda
3 squares white almond bark (or substitute white chocolate chips)

Directions:
Pop bag of microwave popcorn according to package directions.  (I use smart pop 94% fat free...you don't need massive butter flavor here.) Spread on large parchment-lined baking sheet, removing unpopped kernels.  Spread peanuts over popcorn.

Mix together brown sugar and cinnamon in a medium microwave safe mixing bowl.  Slice butter and place pats on top of cinnamon/sugar mixture.  Drizzle corn syrup over the contents of bowl.  Microwave for 2 minutes, then stir.  Microwave for 30 seconds.  Stir.  Microwave for 30 more seconds.  Stir in vanilla and baking soda.

Drizzle cinnamon sauce over popcorn and peanuts.  Bake for 20 minutes at 250 degrees, stirring popcorn halfway through.

Melt almond bark in a small microwave safe bowl or liquid measuring cup according to package directions.  Drizzle over baked popcorn.  Allow to cool until chocolate has set.  Break into pieces and enjoy!
 
I found this recipe on Stay at Home Artist and made it yesterday. It is delicious. It reminds me of cinnamon rolls. It would be great to make for holiday gifts to put in little gift bags. I didn't have any corn syrup so I used regular syrup in mine and it was yummy.
